BBQ Broccoli Slaw Stir-Fry

My normal routine for making meals is simple. I look in my fridge see what produce needs to be used and add a meat. Yes of course i have up the meals but a meat and veggie are the base of every meal i make. This meal was concocted the same way and it turned out fabulous. It has become a staple in our home!

Serves 4 people Ingredients

4 cups broccoli slaw

4 cups Cole Slaw

1 -1 1/2 cups fresh green beans- chopped

Meat of choice: I have used both options and like them both(The pictures show the Salmon option)

EITHER: 4 salmon burgers cooked and chopped OR 3 large Chicken breast grilled chicken and chopped . I do add some chopped avocado to the chicken version though to add healthy fat. But its optional

Salt and pepper to taste- optional I like to use Flavor Gods Garlic Lovers seasoning for less sodium

Olive Oil Cookie spray

Directions:

Saute’ chopped green beans in olive oil spray, Pepper and salt/garlic lovers on medium heat for 5-10 minutes until tender. Place in a large bowl and set aside. Saute broccoli slaw and cole slaw on medium low heat with olive oil spray, pepper and salt until slaw looks transparent. Its about 3-5 minutes. Add into large bowl with green beans. Add cooked chopped salmon or chicken. Stir and add 1/4 cup Walden farms Hickory Smoked BBQ sauce or BBQ sauce of choice.

 

Its that simple. This dish is very healthy
