BLTA Chicken Salad

This is my favorite lunch! I have it probably 2-3 times a week.  Its very satisfying, tastes guilty, but treats my body right! Thats a winner for me! I know you will enjoy this! Even my hubby LOVES it and asks for it and he is an EXTREMELY picky eater. I use sprouts bread which is a local health food store. I make sure any time I use bread I know all the ingredients. The list is short and the carbs aren’t out of control. Mine is 12 g 60 calories per slice. Also canned chicken for this recipe totally works if you are in a rush. Just drain and measure!

Serves 1 :

½ cup chopped chicken (even canned chicken works & I use both)
7ish grape tomatoes cut in thirds
1 slice turkey bacon cooked and crumbled or 1 tbs bacon bits
1-2 tbs chopped green onion
1.5 tbs  Greek yogurt
1 tbs LOW-FAT mayo NOT light (The kind that I use is only 15 cal – 1 g of fat. Kraft makes one)
Pinch of Stevia
A few pieces of lettuce
1-2 tbs avocado about 1/5th – just enough to spread over a slice of bread.
Salt and pepper to taste
1 slice of bread toasted .

 

Supplies for the chicken salad. All you need now is avocado bread and lettuce

Directions:
-Mix chicken ,Greek yogurt, and  mayo together with salt &  pepper taste and pinch of Stevia.
-Add in chopped tomatoes and chopped turkey bacon.
-Toast bread and spread avocado on top as if it were butter.
-Top bread with lettuce and then chicken salad mixture. I will normally sprinkle with pepper on top as well .
