Apple Cinnamon Cookies

I feel like the Fall is knocking at my door i know for a lot of you its already there but in Arizona its still in the 90’s and low 100’s.  Our weather is still pretty toasty through October but I still want to open the door and say ..Hello Fall…hello pumpkin recipes…hello football…hello holidays… APPLE RECIPES!

So here is your first one to get started with  a little early. I have an AMAZING Pumpkin Cinnamon Bake coming down the line soon but I will wait until its actually October to post it. I made up this  apple cookie recipe about a year ago and its still one of my favorites! The twins are always asking me for a cookie and I feel great handing them one of these! They are so soft and yummy you will want to eat 100 of them. And even thought they are healthy I would try to avoid that!

Before I give you the recipe I am going to give you the cold hard facts….ok actually these are more like warm cozy facts…The Macros are killer!

Each cookie:

39 calories
.66 g fat
6.17 carbs
2.35 protein

Ingredients:
1 1/3 c oat flour
3 tbs 0% Greek yogurt
2 tbs maple syrup ( I use walden farms )
6 stevia packets
3/4 tsp cinnamon
1/2 tsp pumpkin pie spice
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 whole egg
1/2 c no sugar added apple sauce
3 tbs cinnamon protein OR oat flour
1 tsp vanilla extract
1/4 tsp butter extract
1 medium apple peeled,cored and chopped fine

Mix all the above ingredients together except chopped apples. Gently stir apple in last and then refrigerate for 30 minutes.

Bake at 350 for 8 -10 minutes
Makes 16 cookies

Yep its that easy!
