Bacon Turkey Avocado Sandwich

I love warm sandwiches. When I worked in a office I kept a panini grill in the bottom drawer of my desk. I would make this sandwich pull out the little panini press and make a boring wrap into an amazing quesdilla. Problem was the grill would sizzle and it smelled so good that my co workers started noticing! Which lead to me making more hot sandwiches !  Sharing is Caring! It was fabulous until my boss noticed and told me it wasn’t the best idea! Best idea..what are you talkoing about its an AMAZING IDEA. I think she wanted one as well. But she didn’t make me stop  just said keep it down! So I did! This is my go to quesadilla! You don’t need a panini press just a pan and a stove! How can you go wrong with bacon, turkey, avocado and a creamy swiss parmesan spinach mixture. Its awesome and it wont kill you calorie bank. I eat the foods I crave ALL THE TIME I just make them healthier. Its that simple!

 

Serves 1:

1 low carb Tortilla( I use La Factory Tortilla ‘s pictures at the bottom)

1 -2 tbs shredded Ramona cheese or Parmesan (read the label mine is 20 calories 1g of fat per tbs)

1 wedge light swiss laughing cow cheese

Handful ripped spinach

1/4 avocado sliced thin and chopped and spread around

Sprinkle1 tbs bacon bits or one slice chopped turkey bacon

3-4 cherry tomatoes sliced thin

2 tsp deli honey mustard – just drizzle all over you don’t have to measure this exactly

2 slices deli turkey meat or ham

 

Mash parmesan, laughing cow wedge and spinach together. Spread of half the tortilla. Place turkey on top of mixture and tomatoes, crumbled bacon and a drizzle on honey mustard.
Fold in half and spray a pan with olive oil and let cook on medium until slighting browned/toasted and flip. Thats it !!
