Sat that five times fast…chicken bacon Brussel Stir fry! OK you don’t have to 🙂 This is an oldie but goodie. As I was about to chow down for lunch today I snapped a picture real fast to share this dish with you all! Its easy fast and keeps well if you want to pack it for lunch and then heat it up! I used canned chicken because sometimes its faster. Yes its fabulous with grilled but with the chaos at my house sometimes canned chicken works just great!
2 cups cups Brussel sprout (cut in half)
1-2 tsp minced garlic
Squirt of lemon juice
1 large can of chicken of 8-12 oz grilled chicken
2-3 slices cooked & crumbled Turkey bacon or bacon bits.
2 tbs shredded Parmesan (check the label mine is 30 calories 1.5 fat per tbs)
Sauté brussel sprouts with salt pepper to taste with minced garlic. Once cooked squeeze lemon juice on top and stir (just one-two squirts). In a seperate pan warm up already cooked chicken . Combine chicken and brussel sprouts into one pan. Sauté on medium low for a few minutes and add cooked bacon. Pull off heat and top with Parmesan
