Chicken Cordon Bleu!

This is going to be a really quick post but I have a MAD obsession with the meal and I wanted to share it with you! This is one of our current favorites and its easy to make but seems soooooooo fancy!!! Its low carb with lots of protein!! Add some broccoli or greens of your choice for the side dish! Its a perfect family meal for Sunday without a lot of chaos!

Line pan with tin foil and turn oven to 450.

4 chicken breast sliced in half length wise and pounds or rolled a flat
1 egg
1/2 c panko crumbs
1/4 cup shredded parmesan
salt and pepper to taste
light swiss cheese (target and costco sells some )
quality low sodium ham
Mix panko crumbs and cheese and set aside.
Crack egg into a dish and scramble
Place a slice of chicken in the egg to get it wet and then place it in the cheese panko mixture. PLace a slice of swiss and 2-3 slices of ham on top. Roll it up and put a toothpick or two through it to help it stay. Place on the baking dish
Bake at 450 for 25 minutes!
This last picture has TERRIBLE lighting but wanted you see the the product before its cut! The cheese just oozes out and it soooo tasty!
