Lean & Green Muffinless Egg Cups
Since I just change blog address’s I am still in the process of moving all my stuff over so bear with me when I add things!
One of the biggest keys to fitness is food prep. “If we don’t prepare , we prepare to fail” Its true! If I am not prepared with a healthy snack in my purse, my breakfast ready to go, or my meat already cooked for dinner health goes out the window when hunger sets in! These muffin cups are an easy way to have eggs to go. Prepare them a had and just grab a little bag!
They use all green veggies, are packed with protein, and are a great way to have eggs full of flavor but keep them lean still!
My husband favorite time of food is Mexican so this is one of his favorite breakfasts as well. The green chills make at killer by adding a little kick! They are good with a little salsa as well. These are perfect to make sunday then separate into little baggies and have them ready to go for a few days in a row. I hope you guys like them as much as I do!
Recipe makes 12 muffin cups:
4 eggs
8 egg whites
¼ c chopped green chilies (from a can because I keep it simple 🙂
1 bunch green onions chopped
12 pieces of Canadian bacon (you can sub out for ham BUT Canadian bacon is full of flavor and pretty light)
1 cup ripped spinach
1/8 tsp salt or to taste
½ tsp pepper or to taste
Mix everything together besides canadian bacon. Spray muffin tin and place Canadian bacon in the bottom with a 1/4 c measuring cup fill muffin tins lined with the Canadian bacon as seen below
Bake at 375 for 13 minutes
