A decent photo of a meal is a hot commodity around here!! This is currently one of my favorite go to salads right now. Lots of protein, low carb and healthy fats! You can’t beat that! Well today when I tried to take a picture in the yard to share with you all little fingers crept in from Livvy as she attacked the tomatoes then Ella came for the avocados and it was all down hill from there! I was pushing hands away left and right LITERALLY and than just gave up! So don’t mind the little pinchers stealing from my plate! This was an early on picture before to much food was missing ! BUT for now here is a great salad JUST for you!
Serves 1:(but should have made it bigger with the scavengers that live at my house)
2 cups Chopped spinach
6 oz Chopped grilled chicken
1/4 c Chopped grape tomatoes
1/4 Chopped avocado
1 tbs Roasted pine nuts (broil for a few minutes in the oven keep an eye on them though they burn fast)
1-2 tbs little goat cheeses (a little more than half an ounce)
Dressing: adjust as needed but I feel like a little goes a long way once you toss it!
1tbs white vinegar
1-1 1/2 tsp olive oil
1/2 tsp Dijon mustard
1 – 1 1/2 tsp water
Salt and pepper to taste
